3 tbsp butter
3 tbsp flour
1 cup milk
1-1/2 tsp salt
1/4 tsp pepper
1 tbsp minced parsley
1 tsp grated onion
6 medium-sized cooked potatoes
1 cup grated sharp cheddar cheese

Directions:
Directions:
Melt butter, stir in flour, cook a few seconds; gradually add milk, stirring until thickened. Season with salt, pepper, minced parsley and onion. Peel potatoes and cut into cubes. Lightly mix sauce into potatoes. Turn into a 5x9-inch buttered loaf pan and pat down evenly. Chill for 4 hours or more. Unmold on a buttered heatproof platter. Bake at 350º for 45 minutes. Remove from oven, sprinkle cheese over the top, return to oven for 15 minutes to melt and brown cheese.
