2-1/4 C. Flour
1 C. Sugar
1 tsp. Baking Powder
1/2 tsp. Baking Soda
2 Egg Whites
2 Whole Eggs
1 tsp. Vanilla Extract
1 tsp. Almond Extract
1 C. Dried Cranberries
3/4 C. Sliced Almonds

Directions:
Directions:
Preheat oven to 375º
Combine dry ingredients and set aside. Whisk egg whites, eggs and extracts in a bowl. Add dry ingredients, mixing just until moistened. Add cranberries and almonds.
On a floured surface, divide batter in half a pat into a 12"-14" log, patting the edges and making the center kind of "domed." Place logs on a cookie sheet and bake for 30 minutes, until firm. Remove from the oven and cool on a wire rack.
Cut the biscotti into 1/2"-3/4" slices. Place the cut biscotti slices on the cookie sheet and bake for an additional 20 minutes. Remove from oven and cool.
