2 cups Vegetable broth
1 (14-ounce) can unsweetened coconut milk*
1/2 tablespoon curry powder
1 jalapeņo chili, seeded, minced
3 tablespoons fresh lime juice
1/4 cup chopped green onion
1/4 cup chopped fresh cilantro
1 cup freshly cooked white rice
1 teaspoon salt, or to taste
Freshly ground pepper to taste
Lime wedges
Tofu (optional- prepared as preferred)

Directions:
Directions:
1) Bring broth, coconut milk, curry powder and chili to simmer in heavy medium saucepan over medium heat. Cook until simmering, and allow to simmer while stirring constantly for about 5 minutes.
2) Remove from heat and add lime juice, green onion, cilantro, rice, salt and pepper to taste, stirring to combine.
