Voodoo Chicken with Cheesy Vegetable Pasta Recipe

Ingredients: 1 cup chopped chicken breast, cooked 2 cups sliced mushrooms 2 cups chopped summer squash 1 cup chopped red onion 3 garlic cloves, minced 2 cups of grated cheese, (I used a mixture of Parmesan, smoked white cheddar, and smoked Gouda) 1 -2 chopped tomatoes 3 green onions, sliced Olive oil 2 T. butter 2 T. flour 2 cups skim milk 1 box whole wheat pasta (I used pasta) Cajun Seasoning to taste.

Directions:Bring water to a boil and cook pasta according to directions.
Meanwhile, heat olive oil in a large frying pan and add mushrooms, cooking until lightly browned. Remove to a large serving bowl. Add 1 tsp. olive oil and add red onion, garlic, and summer squash, cooking until tender and lightly caramelized around the edges. Remove to same dish with mushrooms.
Warm chicken in skillet, season, and add to vegetable mixture.
Melt butter in pan, add flour to make a roux and then pour in milk. Add cheese a little at a time until melted and sauce is thick. Season to taste with Cajun seasoning. Add to vegetable mixture. Toss in fresh tomatoes and green onions.
Drain pasta well, mix with vegetable/meat mixture and serve. |

Notes: I literally cleaned out the fridge on this one. Would be equally as good as a vegetarian dish. This was AMAZING if I do say so myself. Sidney concurs.
