2 C all-purpose flour
1/3 C sugar
1 Tbsp baking powder
1 tsp cinnamon
1/4 tsp baking soda
1/4 tsp allspice
1/4 tsp nutmeg
1 C apple cider or apple juice
1/3 C vegetable oil
1/4 C maple syrup
1 large egg, beaten to blend
1 tsp vanilla extract
1 peeled, grated apple
1 C golden raisins
3/4 C coarsely chopped walnuts

Directions:

Preheat oven to 400º. Line muffin cups with paper liners. Combine flour, sugar, baking powder, cinnamon, baking soda, allspice and nutmeg in large bowl. Whisk apple cider, vegetable oil, maple syrup, egg and vanilla extract in medium bowl to blend. Add to dry ingredients and mix just until combined. Fold in grated apple, raisins and chopped walnuts. Divide equally among cups and bake until brown and tester inserted into center comes out clean, about 28 minutes. Transfer to rack and cool.
