1 package tofu
1 tablespoon olive oil
1 jar masala simmer sauce from trader joes (or spinach sauce or curry sauce)
1 serving whole wheat couscous*
1 package broccoli florets, steamed

Directions:
Directions:
1) Open tofu package and squeeze lightly in container over the sink to get rid of some of the liquid. Cut tofu into approx. 1 inch cubes. Heat oil in skillet over medium heat, and add tofu. Flip tofu cubes every once in a while and squish them down with spatula to cook out excess liquid.
2) Once tofu cubes are lightly browned on most sides, lower heat and dump in simmer sauce. Cook for a couple minutes to allow flavor to sink in.
3) Serve with couscous (follow directions on package - this is super easy to make) and steamed broccoli.

*A variation on the couscous if you don't like it plain is to add a handful of dehydrated mushrooms, 1/2 tsp of thyme and 1/2 tsp garlic salt to the water before boiling, or other seasonings to preference.
