4 C all-purpose flour
2-1/2 C sugar
4 tsp baking soda
4 tsp cinnamon
1 tsp salt
4 C coarsely grated carrot
1 C raisins
1 C chopped pecans
1 C sweetened,shredded coconut
2 tart apples, peeled and grated
6 large eggs
2 C vegetable oil
2 tsp vanilla

Directions:

Preheat oven to 350º
Into a large bowl sift together the flour, sugar baking soda, cinnamon and salt. Stir in carrot, raisins, pecans, coconut and apples.
In a bowl whisk together the eggs, oil and vanilla, add the mixture to the flour mixture, and stir the batter until it is just combined.
Spoon the batter into well-buttered 1/3-cup muffin tins, filling them to the top and bake in the middle of oven for 30 to 35 minutes or until springy to the touch. Let the muffins cool in the tins for 5 minutes and turn them out onto a rack.
