2-3 lb skin on center cut salmon fillet about 1.5 in. thick
2 t. ground coriander
Salt and pepper and/or Old Bay
1/4 c. maple syrup
1-2 T. Dijon
2 in. ginger peeled and grated
Zest and juice of lemon or lime
2 T. butter

Directions:
Directions:
Soak plank about 2 hours.
Preheat oven 375º
Sprinkle Salmon with coriander, seasoning. Let stand 15 min. Rub with oil
Heat syrup, ginger zest and butter and mustard over med heat until slightly thickened about 7 min.
Stir in juice and set aside.
Pat plank dry and oil it. Place on oven rack and preheat 15 min.
Place fish skin side down on plank. Brush with 1/2 glaze. Cook until firm about 15-20 min.
Change setting to broil and brush with remaining glaze.
Broil 3-4 min.
Let rest 5 min on plank. Serve warm or room temp.
