1 small zucchini, cut into 1/4 inch slices
1 tsp. minced garlic
1 T. olive oil
1 1/2 cups thinly sliced steak (any kind will do)
3/4 cup halved cherry tomatoes
1/4 cup prepared Italian dressing
Hot cooked spaghetti
1 T. grated Parmesan cheese

Directions:
In a large skillet, saute zucchini and garlic in oil until zucchini is crisp-tender. Add the beef, tomatoes and dressing. Cook until heated through. Serve with spaghetti. Sprinkle with Parmesan cheese.

Variation: I combine the spaghetti and vegetable mixture together in a large pot and pour the dressing over it all. Add as much dressing as you like for taste and to coat the spaghetti.
