1 cup crushed pineapple
1/3 cup sugar
Juice of 1 lemon (or 2 TBSPs bottled lemon juice

! pkg lemon jello
1 cup boiling water

1 tin pimento or sliced stuffed olives
1 pint cottage cheese

1/2 pint whipping cream

Directions:
Directions:
Drain pineapple and place it in a small saucepan with the sugar and lemon juice. Boil together for 3 minutes. Set aside to cool.

Mix lemon jello with 1 cup boiling water. Dissolve thoroughly and place in fridge to cool. When set slightly add the pimento or stuffed olives, cottage cheese, and the pineapple mixture.

Whip the cream and fold into the other mixture. Pour into a jello mold or bowl and place in the fridge to set.

It was either aunt Evelyn or aunt Joyce who introduced this recipe to the family. It has become our family favourite for Christmas and other special occasions.The recipe always has to be at least doubled to accommodate the taste buds.
