1 1/2 cup boiling water
1 cup Quick oatmeal
1 cup brown sugar
1 cup white sugar
1 tsp. cinnamon
1 tsp. vanilla
1/2 cup liquid oil (Wesson)
1 1/2 cup self-rising flour
2 eggs
1 tsp. baking soda

Directions:
Directions:
In mixing bowl, put oatmeal and pour boiling water over it and let sit for a few minutes. In another bowl sift flour, cinnamon and baking soda together. Add sugars and eggs to oatmeal and mix well. Add flour mixture a little at a time rotating with oil until all is mixed well. Bake in a 13 X 9 pan at 350 degrees until done. (about 25-30 minutes)
ICING: 1 c. brown sugar, 1 stick butter or margarine, ,1/2 c. crea(evaporated milk), 1 c. coconut, 1 c. chopped pecans or walnuts
In a saucepan, mix cream, sugar and butter and cook on medium heat stirring continually until it comes to a boil. Set off heat and add coconut & nuts. Mix well and pour over warm cake. Let set for an hour or more and serve.
