3 c. Milk
2 stalks Celery - chopped
1 medium Onion - chopped
1 small Carrot - chopped
1 large Bay Leaf
Dash Nutmeg
3 or 4 Peppercorns
Salt & White Pepper
2 c. Elbow Macaroni
2 quarts Water
4 Tbsp. Margarine
3 Tbsp. Flour
1-1/2 c. Sharp Cheddar Cheese grated or a mix of your favorite cheeses
1/4 tsp. Dry Mustard

Directions:
Steep (do not boil) milk, celery, onion, carrot, bay leaf, nutmeg, peppercorns, salt & white pepper on a low heat. Keep it below simmer. Let steep for 1/2 hour. Remove from heat and strain the milk into a bowl. Remaining ingredients can be thrown away.

Boil macaroni for 8 minutes then strain. Put in a buttered loaf pan.

In pot used to cook the macaroni, melt margarine and add flour making a rue. Stir constantly until smooth. Add milk and continue stirring until thickened a little. Add the grated cheese, dry mustard to macaroni and mix well.

Top with additional cheddar cheese for a crispy top or with bread crumbs. Bake in a 350º oven for 1/2 hour or 45 minutes.
