3 lbs. large mushrooms
water, salt & lemon
5 slices Prociutto Ham - finely chopped
4 slices Genoa Salami - finely chopped
3 slices Boiled Ham - finely chopped
2 tbsp. minced parsley - finely chopped
Dash Thyme, Oregano, Leaf Sage, Dried Basil
Ground Pepper
1-1/2 c. grated Romano Cheese
2/3 c. Chicken Broth

Remove stems from mushrooms. Carefully chop stems finely.

Boil caps 10 min. in water, salt & 1/2 lemon. Drain.

Mix chopped stems, chopped meats, spices and 1 cup Romano Cheese.

Stuff mushroom caps with mixture. Pour Chicken Broth in a low bake pan and add mushrooms.

Bake at 350º for 15 minutes.

Sprinkle remaining 1/2 c. cheese over mushrooms. Put under broiler for 3 minutes and serve.
