For each potato:
2 tablespoons butter
2 tablespoons sour cream
1/4 teaspoon salt
Pepper, optional

Microwave (or oven bake) desired number of potatoes. Slice the top from each potato (on its side). Remove the centre of potato to a mixing bowl using a melon ball scoop or a teaspoon, leaving shells intact. In the mixing bowl, add butter, sour cream, salt and pepper. Mix until smooth (can use an electric mixer). Fill the shells, mounding if necessary. Sprinkle with chives and/or grated cheddar cheese. Place on suitable plate for microwave oven. Microwave on high 1 minute per potato. If more than two potatoes are microwaved at one time, arrange in a circle. If not using a turntable, rotate dish 1/2 turn at half time. Potatoes can be prepared and refrigerated ready for the next day. Add 1/2 minute to the time for each potato if taken from the fridge.

This was always a family favourite when the kids were growing up. If I baked potatoes, but didn't do them twice baked, the kids would scoop them out at the table and make their own.
