1 cup butter (if you use unsalted, add 1 tsp. salt)
3 cups granulated sugar
1 tsp. baking powder
5 large eggs
2 tsp. vanilla
3 cups all purpose flour *
1 cup heavy whipping cream
butter & flour for two 9x5 Loaf pans

* Sift flour together at least 3 times before measuring.
Cream butter and sugar together in an electric mixer until light, fluffy, and almost white. (4 to 5 minutes).
Add eggs (one at a time), beating well after each addition.
Add 1/3 of flour and baking powder into mixer at slow speed.
Add 1/2 of the heavy whipping cream.
Continue alternating flour and cream ending with flour.
Add vanilla.
With rubber spatula, scrape sides and bottom until completely mixed.
Pour into loaf pans up to 2/3 full.
START IN A COLD OVEN
Put pans on middle rack. Turn oven to 325º
Bake 1 hour + 20 minutes, or until toothpick comes out clean.
