- Beans (Cannellini, white Navy, pea, etc., either 8oz bag of dry beans -- or 16 ounce can)
- 1/2 pound small pasta (Ditalini, elbows, etc.)
- 1 Bay Leaf
- 2 cloves garlic
- salt and red pepper to taste
- 3 tbsp olive oil

- Heat olive oil in a skillet.
- Saute 2 cloves garlic, salt, red pepper in olive oil until lightly brown.
- Remove garlic and set aside.
- You have the option of using dried or canned beans.
- If using dried beans, rinse, inspect and remove any foreign matter (pebbles, etc.). Soak the dried beans overnight in a bowl of water. Rinse again before continuing with recipe.
- If using canned beans, place in colander and rinse with cold water.
- Add beans to a pot and cover with water. Be careful to not use too much water else your sauce will be too watery.
- Add bay leaf to pot.
- Simmer beans covered for approximately 1 hour or until tender.
- Separately cook 1/2 lb pasta according to directions.
- After pasta has completed cooking, drain-off water and let the pasta cool.
- Combine the pasta, beans, and oil which has been flavored with garlic and red pepper.
- Eat with nice Italian bread.

Be careful to not place hot pasta in with beans as it will absorb the juice.
