Crockpot White Bean Cassoulet Recipe

2 tbsp. olive oil
1 large sweet yellow onion, chopped
8 oz. baby carrots, halved
2 garlic cloves, minced
2 (14.5 oz.) cans Great Northern beans (or other white variety), drained and rinsed
1 (28 oz.) can diced tomatoes, with their juices
1 tbsp. tomato paste
1/2 c. vegetable stock
1/4 c. white wine
2 bay leaves
1 tsp. dried thyme
salt and freshly ground black pepper
1 package Gimme Lean vegetarian sausage (available at Trader Joe's)

Directions:
1. Heat 1 tbsp. of the oil in a large skillet over medium heat. Add the onion, carrots, and garlic. Cover and cook until softened, about 5 minutes.

2. Transfer the onion mixture to a slow cooker. Add the beans, tomatoes, tomato paste, stock, wine, bay leaves, and thyme. Season with salt and pepper. Cover and cook on low for 8 hours.

3. Just prior to serving, brown the Gimme Lean in a skillet with remaining olive oil. Stir into the cassoulet and let simmer a few minutes more.

4. Remove and discard the bay leaves. Serve hot with crusty French bread.
