1 tbsp. olive oil
1 green bell pepper, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 c. arborio rice
3 c. fresh spinach
1 (14.5 oz.) can vegetable broth
1/2 c. grated Parmesan cheese, divided
1 tsp. salt

Directions:
Directions:
1. Preheat oven to 400ºF. Grease 1 1/2-quart casserole.

2. Heat oil in a skillet over medium heat. Add green pepper, onion, and garlic; cook for 5 minutes. Add rice and stir to coat well. Stir in spinach, broth, 1/4 c. of the Parmesan cheese, and salt.

3. Spoon mixture into prepared baking dish. Sprinkle with remaining 1/4 c. Parmesan. Bake 35-40 minutes or until rice is tender.

I use this as a method recipe and freely substitute other veggies depending upon what I have on hand.
