1 1/2 cups whole wheat flour (or all-purpose flour)
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/4 tsp. ground cinnamon
1 egg
1 cup mashed ripe bananas (3 medium)
3/4 cup sugar
1/4 cup cooking oil
1 tsp. finely shredded lemon peel (optional)
1/2 cup chopped walnuts
Pinch of brown sugar

Preheat oven to 350ºF.
Grease bottom and 1/2 up sides of an 8x4x2 inch loaf pan; set aside.

In a medium bowl, combine flour, baking powder, baking soda, cinnamon, salt.

In a different medium bowl, combine egg, mashed bananas, sugar, cooking oil, lemon peel.

Add egg mixture to dry mixture and stir until moistened and mixed, but still lumpy. Fold in nuts.

Spoon batter into the pan, sprinkle brown sugar on the top and more nuts.

Bake 55-60 minutes or until wooden toothpick comes out clean. Cool on wire rack for 10 minutes, remove loaf from pan. Let cool before cutting. (Or, do what we do and wait 10 minutes, then cut into the bread and cover with butter!)

My daughter Taylor doesn't like nuts, while Dave loves them....so I wait to fold in the nuts and after pouring the mixture into the loaf pan, I add nuts to half and using a fork press them down into the batter. I decorate the top with nuts on the half that has nuts. Makes everyone happy!
