3 cups all purpose flour
1 cup potato flakes
3 tsp. sugar
1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking powder
1/3 cup butter, softened
1-1/2 cups raisins
1 tsp. caraway seeds
2 large eggs
1 cup buttermilk or sour milk

Directions:
Directions:
Combine flour, potato flakes, sugar, baking powder, salt, and soda in large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in raisins and caraway seeds. In separate bowl, beat eggs slightly. Combine eggs with buttermilk and add to flour mixture. Stir until just moistened. Knead 10 strokes on floured surface. Bake in 350º oven for 45 to 50 minutes. Remove from oven and allow to rest for 10 minutes.
