3 c. flour
3 T. sugar
1/2 tsp. salt
4 c. milk
3 eggs
3 T. vegetable oil
1 tsp. vanilla extract

mix all the dry ingredients together in a large mixing bowl. In another large mixing bowl combine all the wet ingredients. Whisk the wet ingredients until the eggs are well beaten and everything is combined. Then add the wet ingredients to the dry ingredients (all at once). Whisk all the ingredients together until they are well blended (there should be no lumps). The batter will be pretty runny. heat a large skillet to med-high. pour about 2/3 of a cup of batter into the middle of the skillet and then pick the skillet up and rotate it around to spread out the batter to cover the whole base of the pan. When the top of the pancake starts to firm up and appear less liquid flip it. cook on the other side for about 45 seconds or so. Serve with strawberries, butter, cinnamon and sugar, powdered sugar and lemon juice.

I made these often on my mission. very similar to crepes and many other varieties of European pancakes. We make them every Saturday morning. This recipe is pretty big and makes probably 25-30 pancakes. We especially like them with powdered sugar and lemon juice as well as butter and cinnamon and sugar.
