©Cook in double boiler until fluffy and done. Serve warm with a mixture of sugar and cinnamon sprinkled on top.-also can add a cube of butter in center..

Rice was another of the staple foods we had when I was growing up. I don't know the recipe, but a big kettle of it would be cooking on the back o the cookstove. .We would be given a big bowl and put sugar and cinnamon on it. Everyone liked it.
At christmas, the Danish tradition is to serve a small bowl of rice before the meal with an almond hidden in one. The one who gets the almond gets a prize. We changed it somewhat as all the little ones didn't want the rice. So instead, I would mark something on the table, nut cups, favors, plates, chairs, etc and they would get the prize. the grandchildren enjoyed trying to figure out the code. they are adults now , but still enjoy it. One time I had different silverware at one place setting-too obvious-they didn't see that. Once I gave them all a piece of paper and they had hold it behind them and tear out the shape of a Christmas tree. The best one got the prize. There were some neat ones and some really funny ones! We do this when we are done with the meal, everyone is at the table and before we have dessert. Fun time!
