2 (3 oz) pkg. peach flavor gelatin, 1 C boiling water, 2 C cold water, 4 C fresh sliced peaches (peeled), 3 C cold skim milk, 2 (1.4 oz.) pkg. sugar free, fat free instant vanilla pudding, 1 (8 oz) container fat free sour cream, 1 ( 12 oz) container lite frozen non-dairy whipped topping, Thawed and 1 ( 11oz) carton reduced fat vanilla wafers.

Desolve gelatin in boiling water. Add cold water and chill until slightly thickened. Add peach slices, reserving 7 slices for garnish. Return gelatin to refrigerator; chill until consistency of honey. Meanwhile in large bowl combine milk and pudding mixes. Mix thoroughly with wire whisk or low speed of electric mixer. Stir in sour cream and fold in half of whipped topping.
In trifle bowl, layer vanilla wafers, pudding mixture and peach mixture. Repeat layers 2 or 3 times and spread remaining whipped topping over top. Garnish with remaining peach slices and fresh mint sprigs.
