1 package Sweet Goodness Pan Bar Mix
3 large eggs
3/4 cup oil
1 1/2 cups finely shredded carrots
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp allspice
3/4 cup raisins
Cream Cheese icing
20 oz can crushed pineapple (no sugar added) - well drained
10 oz pecan pieces - lightly toasted

Preheat oven to 350º Spray 2 9" round pans with non-stick spray. Mix first 4 ingredients together in mixer. Add spices, then raisins. Pour into greased pans. Bake for 30-33 minutes. Leave cakes in pan for 3-5 minutes. Then remove and cool. Place bottom layer of serving plate. Frost top of bottom layer of cake with icing. Spread well drained pineapple on top of icing. Place top layer on top. Completely frost cake. Gently press pecan pieces onto icing on sides of cake.
