1/2 cup lemon juice
1/3 cup of extra virgin olive oil
1/3 cup Tahini
2 tablespoon honey
2 cloves garlic, minced
1 teaspoon salt
freshly ground pepper
1 pound potatoes
1 pound raw chicken strips
4 cups baby spinach or mache
1 cup shelled English peas
1 tablespoon finely chopped shallots

Directions:
Directions:
To prepare dressing: combine lemon juice, 1/3 cup oil, tahini, honey and minced garlic in a blender and blend until smooth.
Place steamer basket into large saucepan. Add 1 inch of water and bring to boil. Put potatoes in the basket and steam until barely tender about 15 to 20 minutes. When cool slice the potatoes. Next toss the chicken with 1/4 teaspoon of salt and pepper. Heat 1 tablespoon of oil in sauce pan over medium heat. Add chicken to pan and cook until golden brown and cooked through. Transfer to a clean cutting board to cool. Shred chicken into bite sized pieces. Season bowl by rubbing 1/2 cloves garlic and pinch of salt. Chop garlic and add to bowl with potatoes and mache or spinach. Pour 1/2 cup of dressing over the potatoes and greens. Gently toss to coat and then add peas, shallot and chicken. Gently toss and serve.
