2 lb. ground beef
2 large yellow onions, diced
1/2 c. matzo meal
2 large stalks celery, diced
1-16 oz. can peeled and diced tomatos
Pinch salt, pepper, and basil
2 tsp. sugar
1Tbsp. olive oil

Directions:
Directions:
Preheat oven to 350º. Dice onions and celery. Put 1 tbls. olive oil in a frying pan and brown the onions. Place 1/2 of the onions in the bottom of the baking pan for the meat. Mix well, ground beef, remaining 1/2 of the onions, matzo meal, diced celery, juice from the canned tomatos (reserve the pulp), salt, pepper and basil. Make into a loaf and place in the baking dish on the onions. Bake at 350º about 30 minutes until brown. Add 2 tsp. sugar to the remaining tomato pulp and put over meat loaf. Baste several times. Bake approximately 40 to 45 minutes more.

One of Abby's favorites when she was very little. Grandma Lila would bring Hannah to Hebrew school on Tuesday nights and come to the house and make dinner for us. We all loved it. Sometimes Lila would add rice or diced veggies to her recipe.
