3 cups cheddar cheese
2 8oz. pkgs. cream cheese
1 tbsp. vegetable oil or mayonnaise
½ cup beer
¼ tsp horseradish
1 tbsp, roasted garlic (Or 1 tsp fresh minced garlic)
1 tsp Worcestershire sauce
1 pinch cayenne pepper

1 small or medium seeded and chopped jalapeno (To taste)
Crumbled crisp bacon (Optional)
2 green onion tops chopped, (Optional

Mix all ingredients in a large bowl The people that made this said to shred your own cheddar, DO NOT use the pre-shredded cheese. (I have no idea why.) Some people use 1 cup of Monterey jack cheese instead of 3 cups of cheddar. Play with it and fix to you own taste, nothing is etched in stone.

We found this at Charlie’s Deli in Elkhart, Ind. We thought it was original with them. It turns out it supposedly started in Kentucky. It is one of those things you cannot stop eating.
