½ cup soy sauce
½ cup unsweetened peanut butter
½ cup water
1 green onion, sliced to garnish]
4 skinless boneless chicken breast halves
½ tsp. red pepper flakes
¾ tsp. ground ginger
2 tbsp. brown sugar
Non-stick cooking spray
3 tbsp. lemon juice
4 cloves garlic, pressed
Lime wedges to garnish

Cook the soy sauce, water, peanut butter, lemon juice, garlic, ginger, red pepper and sugar over a medium heat for a minute in a pan.

Cool the sauce, remove the garlic and discard it.

Divide the sauce between two dishes.

Cut the chicken into 1 inch strips and thread them on to metal skewers. If you are using bamboo skewers, soak them for 30 minutes before using.

Oil the grid of your grill with a non-stick cooking spray and heat it to medium hot.

Grill the chicken, covered for about 7 minutes, turning it once.

Baste with half the sauce during cooking and serve with the remaining sauce on the side, garnished with the sliced scallions. Serve with lime wedges.

If you do no want to use skewers, you can use chicken tenders or pieces of chicken and grill them.
