2 eggs
2/3 cup of white sugar
2 very ripe bananas - mashed
1/4 cup of applesauce
1/3 cup of nonfat milk
1 T of vegetable oil
1 T of vanilla extract
1 3/4 cup of all-purpose flour
2 tsp of baking powder
1/2 tsp of baking soda
1/2 tsp of salt
1/3 cup of chopped walnuts

Directions:
Directions:
1. Preheat oven to 325º F. Spray a bread pan with a non-stick cooking spray, and lightly dust with flour.
2. In a large bowl, beat eggs and sugar until light and fluffy for approximately 5 minutes. Beat in bananas, applesauce, milk, oil and vanilla.
3. In a separate bowl, sift together flour, baking soda, baking powder and salt. Stir flour mixture into banana mixture, mixing until blended. Fold in walnuts.
4. Pour batter into prepared pan.
5. Bake in preheated oven until golden. Test by inserting a toothpick in the center of the loaf, about 1 hour.
6. Turn bread out onto a wire rack and let cool.
