3 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup walnuts, choppped
1/3 cup fersh or dried cranberries
2 medium Granny Smith apples, chopped
1 1/2 cup sugar
1 cup oil
2 tsp vanilla
2 eggs
Powdered sugar for garnish

Preheat oven to 350 degrees. Grease 10 inch tube pan. In medium bowl, sift flour, baking soda, salt, cinnamon, and nutmeg. stir in walnuts. Peel apples and chop: set aside. In large bowl, combine sugar, oil, vanilla, and eggs. Stir in fruit. Stir in flour mixture until moistened; batter will be stiff. Spoon into prepared pan, spreading evenly. Bake 1 hour or until cake tester inserted in center comes out clean. Cool cake in pan on wire rack for 10 minutes. Loosen edges and remove cake from pan to completely cool on a wire rack. Garnish with powdered sugar when cake is cool

My mom substituted dried cherries for the cranberries.
