1 can black beans
2 ears corn (or frozen corn)
1 jar salsa
1 lime
tortilla chips

Directions:
Directions:
Roast, boil, or microwave corn, cool. If you use frozen corn, thaw. Rinse and drain the can of black beans. Cut corn off cob. Combine corn, beans, and your favorite store bought salsa. Squeeze the juice of a lime over the top and mix in. Enjoy with tortilla chips.

This is so good with fresh corn, but in the winter I use frozen. Sister Mary says she adds more onion, garlic, fresh basil, and a little balsamic vinegar. Can't mess it up and it is yummy!
