1 Lg. Fryer cut up
1 cup flour
1 cup vegetable oil
1 cup diced onions
1 Qt. water
1/2 cup green onions
1/2 cup parsley
Salt and pepper to taste

Directions:
Directions:
Dredge chicken pieces in seasoned flour. (You can do this in a paper bag.)
Fry chicken in oil until brown, but not necessarily done. Drain on absorbent towels.
Sauté onions in remaining oil until fairly clear
Carefully pour excess oil out of frying pan.
Pour in water
Add fried chicken piece
Add green onions & parsley
Cook on medium heat for about 35-45 minutes
Adjust seasonings Serve with rice

You can make the most delicious Fricassee du Poulet - one with what is
called a "long gravy" to cover a lot of rice. It is simple to make and will feed an army.
