6 bacon slices, diced
1 cup onion, chopped
1 cup celery, finely chopped
2 cups fresh mushrooms, finely chopped
1 1/4 cup chicken broth
1 cup red pepper, finely chopped
1/2 cup whole buckwheat, toasted
2 tbsp Cajun seasoning
2 garlic cloves, minced
2 cups wild and brown rice blend, cooked

Directions:

In a medium skillet, over medium heat, cook bacon. Stir often, until browned and crisp. Transfer with slotted spoon to paper towel-lined plate to drain. Set aside.
In same skillet, add onion and celery. Cook for about 5 minutes, stirring often, until onion starts to soften. Add mushrooms. Cook for about 5 minutes, stirring occasionally, until mushrooms start to brown.
Add chicken broth, red pepper, buckwheat, Cajun seasoning, garlic cloves and bacon. Stir. Bring to boil. Reduce heat to medium-low. Simmer, covered, for about 15 minutes, without stirring, until buckwheat is tender and broth is absorbed.
Add rice blend. Cook and stir for about 5 minutes until heated through.
