5 medium sized zucchini (halved lengthwise)
3 Tablespoons butter,
1 chopped medium onion,
1 finely chopped red bell pepper,
3 cloves finely chopped garlic,
1/2 tsp. crushed dried oregano leaves,
1/4 cup grated Parmesan cheese

Directions:
Directions:
Scoop out pulp from 8 zucchini halves,
Arrange those halves on a baking sheet,
Coarsely chop remaining zucchini and the pulp,
Saute chopped zucchini, pulp, and onion in butter until tender,
Add red pepper, garlic, and oregano and saute another 2 minutes,
Spoon vegetable mix into zucchini halves and top with cheese,
Bake about 30 minutes at 375º
