1 tenderloin of beef (about 3 lbs). 3 cloves garlic, thinly slivered. 1 Tbsp olive oil. Salt and fresh ground black pepper to taste.

Preheat oven to 425 degrees. With sharp knife, cut slits into meat and insert garlic slivers. Brush meat with olive oil and rub in salt and pepper. Place the meat on a rack in a shallow roasting pan, and roast for 15 minutes. Reduce temperature to 350 degrees and roast 30 minutes more for medium rare (add 5 minutes for medium). Remove roast, rest at room temperature for 20 minutes before slicing. Cut tenderloin about 1/2 inch thick and arrange on platter. Serve with your favorite sauce (ours is horseradish sauce).
