2 large or 3 small apples (I used Granny Smith)
Juice of one lemon
1/4 c sugar
2 tsp cinnamon
4 large eggs
1/2 c melted butter (1 stick)
1 c pumpkin puree (I used homemade)
2 c sugar
1 tsp vanilla
1/4 c warm water
2 1/2 c flour
1/2 tsp salt
2 tsp baking powder

Directions:
Directions:
Preheat oven to 350º. Grease a bundt pan. Peel and thinly slice the apples, combine with lemon juice and 1/2 c sugar and cinnamon. Cover and refrigerate for at least one hour. Beat the eggs until light and fluffy. Add melted butter, pumpkin, sugar, vanilla and water and beat until smooth. In a separate mixing bowl sift the flour, salt, and the baking powder. Gradually stir the flour mixture into the wet mixture and stir just until incorporated. Do not overmix.
Place a thin layer of apples in the bottom of the pan. Pour about 1/3 mixture in the pan. Add another layer of apples, sprinkle with cinnamon. Repeat layers, finishing with batter.
Bake for 1 hour or until done.
