10-12 medium potatoes, peeled and quartered
1 (8 oz) pkg. cream cheese, softened
1 (8 oz ) sour cream
garlic powder, to taste
salt and pepper, to taste
2 tsp. chives, chopped or to taste
2 tsp. parsley, or to taste
butter, to taste
paprika

Directions:
Directions:
Boil potatoes until tender. Drain well; mash potatoes in a medium mixing bowl. Add cream cheese, sour cream, garlic powder, salt, pepper, chives, and parsley; beat with electric mixer at medium speed until smooth. Spoon mixture into a 11/2 quart casserole; brush with melted butter. sprinkle with paprika. Bake at 350º for 25 to 30 minutes.

This is a great recipe to use for leftover mash potatoes from the night before. Just remember to adjust all ingredients according to the amount of potatoes left over. Also great for taking to covered dish events.
