1/2 c chopped onion
2 tsp veg oil
4 cups chicken broth
2 medium potatoes, peeled and diced (about 2 c)
1 (16 oz) pkg frozen mixed vegetables
1/4 tsp ground black pepper
1 tbsp chopped fresh parsley

Directions:
Directions:
1. Cook onion in oil in large saucepan over medium-high heat until tender.
2. Add chicken broth and potatoes. Heat to boil; reduce heat. Simmer for 10 minutes.
3. Add mixed vegetables and pepper; simmer for 10 more minutes or until potatoes are tender. Stir in parsley. Serve hot with crackers or cornbread.
