12 oz fresh spinach, large stems removed
1/4 tsp salt
1/2 tsp sesame seeds (optional)

1. Heat grill or broiler. Cut and 18 x 18" square of heavy-duty foil or arrange 2 narrower lengths in a cross shape. Spray with oil.
2. Put spinach on foil, spray with oil, and toss with salt. Fold over and seal edges to form a well-sealed pouch.
3. Cook until wilted, about 10 minutes.
4. Season to taste with salt and freshly ground black pepper. Top with sesame seeds (if using).
