1 cups frozen shelled edamame beans
1 large red bell pepper
8 ounces brick Swiss cheese
1 T. olive oil
2 T. rice wine vinegar
1/4 tsp kosher or sea salt
1/4 tsp course ground pepper
1/2 c slivered almonds

Directions:
Directions:
Chop bell pepper and cheese into very small pieces, 1/4 inch by 1/4 inch. Combine edamame, bell pepper and cheese. Whisk together rice wine vinegar and oil, drizzle over edamame. Add salt and pepper and toss to coat. Refrigerate for several hours, add almonds before serving.

Although the male members of my family tease me because I eat this instead of meat, everyone seems to enjoy this salad. It is a protein, so it makes a great lunch, very filling and very yum!
