6 snipe
2 Tbsp melted butter
1 carrot
1 rib celery
1 onion
1/2 tsp thyme
1/2 crushed bay leaf
Apple or celery to stuff

Directions:
Directions:
Clean bird. Skin the head, but leave it on. Remove the eyes and crop. Bend the beak down to pierce and hold the legs in place. Melt butter in pan.
Add carrot, celery, onion, thyme and bay leaf and saute for 1 min. Add birds and saute until they are lightly browned. Add 1/2 c boiling stock Cover pan and bake at 350ºF for 20 min. Make gravy if you want.
