2/3 cup granulated sugar
1/2 tsp cinnamon
1/4 cup butter
2 apples peeled, cored and thinly sliced (I prefer pears)
1/2 cup all purpose flour
1/2 cup milk
2 eggs
1/2 tsp vanilla
1/4 tsp salt
Pinch of nutmeg

Preheat oven to 425.
In a small bowl, stir together 1Tbsp of the sugar
and the cinnamon, set aside.
In a heavy oven proof pan (cast iron) melt butter over medium high heat. Add apples and cook for 5 minutes until apples are translucent.
In a large bowl whisk together remaining sugar, flour, milk, eggs, vanilla, salt and nutmeg but just until blended (don't overmix). Remove pan from heat and pour batter over apples in the pan. Bake in oven 15 minutes until batter is set. Remove the pan from the ovenand gently invert it onto a plate. Slide the pancake back into the pan and place back into the oven for 10 minutes to brown. When toothpick comes out clean the pancake is done. Sprinkle with cinnamon and sugar mixture.
Serve warm with whipping cream or maple syrup
