2 c. raw zucchini, shredded
3 eggs
1 3/4 c. sugar
1 c. vegetable oil
2 c. flour
1/4 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 tsp vanilla
1 c. walnuts, chopped

Directions:
Directions:
Preheat oven to 350° F. Grease & flour 2 (8 1/2 x 4 1/2”) loaf pans.
Strain zucchini & squeeze out any liquid. In a mixing bowl beat eggs, sugar & oil together. Stir in flour, baking powder, soda, salt, cinnamon, vanilla & walnuts. Mix just until combined. Stir in zucchini. Pour into pans. Bake 55 – 60 min.
