3 lb calf lungs cut into strips Cooking bag with (2 Tbsp parsley, 1 Tbsp marjoram and 2 bay leaves.)
1/2 c. flour
t tsp sugar
1/2 c. oleo
1/2 c. minced onion.
1 Tbsp anchovy paste

Directions:
Directions:
Simmer in stock until tender. Remove lungs and keep warm. Reduce the stock by 1/2, adding the cooking bag. In skillet, brown flour and sugar. Add oleo. Stir until smoothe and add onion Strain the reduced stock and add gradually to the flour mixture. Cook and stir until thickened. Add anchovy paste. Put lungs Into a casserole. Cover with the sauce.Cover tightly with lid and bake 350ºF for 30 min. Season and stir in gently, 1 c. sour cream and 1 Tbsp capers. Continue to bake until cream is heated through.
