1/2 c. Dijon mustard
1/2 c. honey
1 1/2 tsp. oil
1 1/2 tsp. lemon juice
4 boneless, skinless chicken breast halves
2 c. sliced fresh mushrooms
2 T. butter
1 c. shredded Monterey Jack cheese
1 c. shredded cheddar cheese

8 strips of bacon, partially cooked

Directions:
Directions:
Combine the mustard, honey, oil, and lemon juice. Use 1/2 c. to marinate chicken for at least two hours. Refrigerate remaining marinade.

Preheat oven to 375º. Brown chicken breasts and then transfer to a greased 11 x 7 glass pan. Spoon reserved marinade over chicken. Saute mushrooms in butter. Top chicken breasts with mushrooms, cheeses, and then bacon strips, crisscrossed. (We like to add Swiss cheese, too!)

Bake, uncovered, for 25-30 minutes.
Great served with wild rice.
