Fresh Milanese Sauce
1 1/2 tablespoons olive oil
1/2 cup Italian seasoned panko
1/4 cup Parmesan cheese, grated
4 (6 ounce) skinless, boneless chicken breast halves
Olive oil-flavored cooking spray

Prepare the Milanese Sauce (1 teaspoon olive oil; 2 cups grape tomatoes, halved; 1 large shallot, chopped; 1/4 teaspoon salt; 1/4 teaspoon freshly ground black pepper; 1/2 cup fresh basil leaves; 1/4 cup dry red wine)

Heat a large nonstick skillet over medium heat until hot and add olive oil. While pan heats, combine panko and cheese in a shallow dish and coat both sides of chicken in panko mixture. Cook chicken in hot oil over medium heat 7 minutes on each side or until done. Place 1 chicken breast half on each of 4 plates. Spoon Fresh Milanese mixture evenly over chicken.
