1 1/2 c. quinoa, rinsed & drained
2 c. milk
1/2 c. vegetable or chicken broth
1 tbsp butter
1 onion, chopped
1 sweet red pepper, chopped
1 sweet green pepper, chopped
2 c. frozen mixed veggies
2 tbsp flour
Salt & pepper to taste

In sauce pan heat milk & broth for 3 min. over med. high heat. (Do not boil). Set aside.
In skillet heat butter over med. high heat. Add onion & sweet peppers. Saute 5 min. until softened. Stir in frozen veggies. Cook 1 min. Stir in quinoa & flour. Add heated milk mixture. Simmer 20 min. until quinoa is tender & most of the liquid is absorbed.
Remove from heat. Cover. Let sit 5 min. Fluff with fork.. Season to taste.
