3 eggs
7 T. sugar
1/4 tsp. salt
3 c. milk
1 tsp. vanilla
nutmeg
1 pie crust (optional)

Directions:
Directions:
Put milk in saucepan and heat (do not boil). In medium mixing bowl beat eggs, salt and sugar by hand; mix well. Slowly pour hot milk into eggs, stirring constantly. Stir in vanilla. Pour into individual baking dishes. Set baking dishes in cake pan with water halfway up the dishes. Sprinkle top with nutmeg. Bake at 350º for 25-30 minutes. Custard is done when knife inserted in center comes out clean.

For pie: Brush pie crust with egg white. Pour custard mixture into pie crust, sprinkle top with nutmeg. Start baking pie at 400º for 10 minutes. Reduce heat to 350º for 20 minutes or until knife inserted in center comes out clean.
