1 c. flour
1 c. oatmeal
2 tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 c. buttermilk (don't substitute)
1/2 c. milk
1/4 c. vegetable oil
2 eggs

Directions:
Directions:
Mix all dry ingredients in one bowl and wet ingredients in another. Add wet to dry and mix well (batter will be thin). Let sit for at least 15 mins so the oatmeal softens. Melt 1/2 tbsp of butter (or just spray with Pam) in a preheated skillet. Add 1/4 c. of batter for each pancake. Grill until brown on one side; flip and grill second side is brown. Serve with butter and syrup!
