1/2 cup chopped onion
2 tbsp butter or margarine
1/4 cup brown sugar, packed
2 tbsp white or cider vinegar
1 tbsp Worcestershire sauce
1 cup ketchup
12 ounces ham, cut into 1/2" strips
1/2 cup pineapple chunks (strain and reserve 1/3 cup juice)
1/2 cup green pepper, cut into 1/2 inch strips
Cooked rice, noodles or hamburger buns

Directions:
In a large skillet, cook onion in butter until soft, but not browned. Stir in brown sugar, vinegar, mustard, ketchup, Worcestershire sauce and pineapple juice. Add ham, pineapple and peppers. Simmer uncovered for 15 minutes. Serve over cooked rice, noodles or toasted hamburger buns.

If serving this dish on a bun, drain excess juice first. This excellent use for leftover ham is good on flour tortillas.
